Breezy, tropical mango and a touch of jalapeño heat add sweet sizzle to the minty mojito. Our fuss-free, pure Calamansi Puree adds the classic burst of lime, with a natural hint of elusive orange fragrance that blends beautifully with the mango. Crisp, refreshing and easily adaptable as a mocktail, these Calamansi cocktails are perfect for a casual brunch al fresco and summer cookouts in the backyard.

INGREDIENTS
Makes 1 cocktail

6-8 fresh mint leaves, plus additional for garnish
2 slices jalapeño, with seeds, ¼” thick
1 Tblsp wild honey, agave nectar or simple syrup
2 Tblsp Sun Tropics® Calamansi Puree
2 Tblsp ripe mango, diced, plus any juice reserved from dicing
2 Tblsp pure mango nectar, such as Sun Tropics® Mango Nectar
1 cup ice cubes
1 ½ ounces white rum
Chilled club soda

DIRECTIONS
Add the mint leaves, jalapeño, honey (or sweetener of choice) and Sun Tropics Calamansi Puree to a Collins glass. Use a muddler to gently muddle the mint and jalapeno to release their tongue-tingling heat and essential oils. Be careful not to muddle too much as you only want to bruise the ingredients, not create a pesto!

Add diced mango and mango puree to the glass, then fill glass 2/3 of the way full with ice. Pour rum into glass and stir briefly to combine. Top glass with club soda, add a sprig of fresh mint and a straw, and enjoy. Cheers!
