You will need:
4 cups water
4 tbsp Sun Tropics Pure Calamansi
4 tbsp Fish Sauce (Patis)
2 tsp sea salt
1 yellow onion, quartered
3 stalks green onion, cut in 3” length
3 tomatoes, quartered
1 lb pork baby back ribs, cut into manageable pieces
6 ps long beans, cut into 3” length
1 eggplant, cut 1” across
6 ps okra, tops cut off
6 small taro roots, peeled
- In a large pot, boil pork ribs with water and salt. Skim off foam while in a rolling boil, about 20 minutes.
- Add onion, green onions, tomatoes and taro. Bring down heat to medium. Secure lid.
- Add fish sauce, salt and Pure Calamansi and let it simmer for 30 minutes.
- Add more Pure Calamansi to adjust sourness. Season with fish sauce and black pepper if needed.
- Serve with rice.
