Pork Sinigang

PORK SINIGANG

2 SERVINGS

 

You will need:

4 cups water

4 tbsp Sun Tropics Pure Calamansi

4 tbsp Fish Sauce (Patis)

2 tsp sea salt

1 yellow onion, quartered

3 stalks green onion, cut in 3” length

3 tomatoes, quartered

1 lb pork baby back ribs, cut into manageable pieces

6 ps long beans, cut into 3” length

1 eggplant, cut 1” across

6 ps okra, tops cut off

6 small taro roots, peeled

 

  1. In a large pot, boil pork ribs with water and salt.  Skim off foam while in a rolling boil, about 20 minutes.
  2. Add onion, green onions, tomatoes and taro.  Bring down heat to medium.  Secure lid.
  3. Add fish sauce, salt and Pure Calamansi and let it simmer for 30 minutes.
  4. Add more Pure Calamansi to adjust sourness.  Season with fish sauce and black pepper if needed.
  5. Serve with rice.
