GRILLED GUAVA-GLAZED CHICKEN with SALAD GREENS
Tender chicken glazed with tropical marinade served with a hearty salad of a variety of flavors and textures.
6 pcs chicken breasts
4 cloves garlic, crushed
1 cup SunTropics Guava Nectar
¼ cup oyster sauce
2 tbsp honey
8 cups mixed salad greens
1 pc medium carrot, cut into strips
1 pc medium unpeeled cucumber, cut into strips
2 medium red onions, sliced thinly
1 cup crumbled nachos
¼ cup SunTropics Guava Nectar
1 tbsp apple cider vinegar
2 tbsp olive oil
¼ tsp salt
dash of white pepper
2 tsp honey
1 tbsp mayonnaise
- Combine all ingredients in the marinade. Place the chicken breasts in the marinade for at least 30 minutes.
- Season the chicken breasts with salt and pepper just before grilling. Grill the chicken breasts, skin side down, until the marinade caramelizes and the chicken is cooked. Baste the chicken with the marinade while grilling.
- In a large bowl, combine the salad greens, carrots, cucumber, and red onions. Toss the salad in the dressing.
- Top with sliced grilled chicken and crumbled nachos before serving.
