2 medium chicken breast, butterflied
1 1/2 cups Sun Tropic Mango Puree marinade
1. Marinade chicken for at least 1 hour or overnight.
2. Grill chicken breast 3 minutes on each side. Save marinade for sauce making.
3. In a small sauce pan, reduce marinade into about a cup over high heat.
4. Cut chicken and serve over rice and vegetables. Spoon the sauce over the chicken. Serve hot.
